Dora’s Pumpkin Bars with Frosting

Ingredients:
Frosting:
1 stick butter
1 8oz. cream cheese
2 tsp. vanilla
2 cups powdered sugar

Bars:
1 2/3 cups sugar
15 oz. can pumpkin, plain
1 cup oil
3 eggs

dry ingred.:
2 cups flour
2 tsp baking powder
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt

instruction:
Frosting:
Cream together until fluffy.

Bars:
Cream together the sugar, pumpkin, and oil. Add the eggs, one at a time to mix. Sift dry ingredients, then add to pumpkin mix. Bake in sprayed pan at 350 for 30 min. Let cool, then cut into bars. Frost each one individually.

Ice Box Fruit Cake

Ingredients:
1 lb round buttery crackers/Ritz
1 lb candied cherries, chopped
1 lb candied pineapple, chopped
1 lb golden seedless raisins
1 lb chopped pecans
1 lb chopped english walnuts
2 3/ 1/2 oz. cans flaked coconut
1 lb marshmallows
2 cups evaporated milk

Instruction:
Crush crackers; add fruits, nuts, and coconut. Melt marshmallows in milk over low heat and add to cracker mixture. Mix well and pack into 2 loaf pans that have been lined with waxed paper. Store in refrigerator. Yield: Two 3 lb cakes.

Date Marshmallow Log

Ingredients:
45 graham cracker squares
24 marshmallows, diced (or use small ones)
1 1/2 cups dates, chopped
3 cups pecans & walnuts, chopped
1 1/2 cups heavy cream

Instruction:
Roll graham crackers to a fine crumb. Combine marshmallows, dates, nuts & cream to graham crackers. Mix thoroughly and shape into a log.

Old Fashioned Fruit Cake

Ingredients:
1/2 lb. butter
1 1/8 cups sugar
6 eggs
2 1/2 cups flour
pinch salt
1 tsp. baking powder
1/2 cup karo white syrup
1 1/2 lb. cherries (red)
1 1/2 lb. pineapple, red, green & white mix
1 1/2 lb. pecans, chopped
1/2 lb. coconut
1/2 lb. orange, lemon & citrine mix
1 1/2 lb. white raisins

Instruction:
Mix all together, place in pan of choice and bake in oven at 225 degrees for 3 hours.

Date Squares

Ingredients:
1/2 cup sifted flour
1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup shortening
1/2 cup sugar
1 egg, beaten
1 cup chopped pitted dates
1/4 cup nuts
confectioners sugar

Instruction:
Sift flour, baking powder and salt together. Blend shortening, sugar & egg together. Add flour in 3 portions, beating well after each addition. Stir in dates & nuts.

Bake on sprayed or lightly greased cookie sheet in moderate oven 325 degrees about 30 minutes. Cool, cut into 1 inch squares, roll in confectioners sugar. Makes about 4 dozen squares.

Fruit Bars

Ingredients:
2 eggs
1 c. brown sugar, packed
1 1/2 stick of butter
1 tsp. vanilla
1 cup unsifted flour
2 cups pecan pieces
1/2# each of candied cherries & candied pineapple

Instruction:
Mix eggs, sugar, butter and vanilla, then mix all wet & flour together. Grease pan with butter. Place broken pecan pieces in bottom of pan, pour mixture over pecans. Lay cut fruit on top, lightly pressing down. Bake in preheated oven on 300 degrees for 1 hour. Cool completely before cutting. Store in tightly covered container.

Pecan Pie

Ingredients:
3 eggs, beaten
1/2 cup sugar
1 cup dark corn syrup
1/4 tsp salt
1 tsp. vanilla
1/4 cup melted butter
1 cup pecans
1 unbaked 9″ pastry shell

Instruction:
Mix eggs, sugar, syrup, salt, vanilla & butter. Then spread nuts in bottom of the pie shell, pour in the filling and bake. 325 degrees for 45-50 minutes.
