Pecan Dainties

Ingredients:
1 egg white
dash of salt
1 cup brown sugar
1 1/2 cup pecan halves

Instruction:
Preheat oven to 250 degrees. Grease cookie sheet well. In mixing bowl, beat egg white & salt to soft peaks, add sugar and beat until stiff & glossy. Fold in nuts. Drop by teaspoon on cookie sheet 3″ apart. Bake for 30 minutes. Remove at once from baking pan onto waxed paper to cool.

Raisin Sheet Cookies

Ingredients:
2 cups raisins
1 cup water (cook these 2 ingred. for 5 min., cool and add 1 tsp. soda)
Mix:
2 eggs
1 1/2 cups sugar
1/2 cup shortening
Add: 1 tsp. cinnamon
1/4 tsp. cloves,
1/2 tsp. nutmeg
1/2 cup nuts
1/4 tsp. salt
1 tsp. vanilla

Instruction:
Mix the dry ingredients with eggs & shortening, then mix with raisins & water, add vanilla.

Bake in cookie sheet at 375 degrees for 25-30 minutes.
Add frosting while hot.

Frosting: melt 3-4 tbsp. butter or margarine, add 1 cup powdered sugar & enough water to spread easily.

Cut into bars & serve.

Dora’s Peanut Butter Cookies

Ingredients:
1/2 cup butter
1/2 cup shortening
1 cup brown sugar
2 tsp baking soda
1 tsp. cream of tartar
1 1/2 cups peanut butter
3 cups flour
2 eggs, beaten
1 tsp. vanilla

Instruction:
Mix ingredients well, form into little balls and put on cookie sheet and press top down with fork. Bake 350 for 12 – 15 minutes.

Dora’s Orange Slice Cookies

Ingredients:
1 1/2 cup brown sugar – not packed
3/4 cup butter
2 tbsp. water
2 eggs
1 tsp. baking soda disolved in 1/3 c. boiling water.
1/3 cup milk

Sift together:
2 1/2 cup flour
1 tsp. baking powder
1/4 tsp. salt

1 cup pecans chopped
1 cup dates chopped
1 cup coconut flakes
1 lb orange slices cut small.

Instruction:
Mix other ingredients together. Drop with teaspoon on greased cookie sheet.
Dredge orange slices in flour mixture. Add dredged orange slices on top. Bake at 350 for 15 min. Makes 100 cookies.

Dora’s Oatmeal Cookies

Ingredients:
2 eggs, beaten
1 cup sugar
1/2 cup butter
1 tsp. level, baking soda, (disolved in 2 tbsp of molasses)
1 tsp. cinnamon
2 cups oats uncooked
mix above and let stand for 1 hour, then add:
1/4 tsp. salt
2 cups flour
1/2 cup chopped raisins
1/2 cup nuts

Instruction:
Drop from teaspoon on well greased tin and bake in moderate oven till golden brown and not too hard (350-375 degrees) for probably 12-15 min.

Notes: This recipe is from Lillian Bartlett to Dora Meyer. She used double amount of raisins & nuts. Can also use chopped dates & currants. The original recipe called for 2 tsp. cinnamon.

Dora’s Merry Christmas Cookies

Ingredients:
1 cup brown sugar
3 cup plain flour
1 cup butter
1/2 cup sweet milk
3 eggs well beaten
3/4 lbs seedless raisins
6 slices candied pineapple
2 cups dates (2 pkg.)
2 cups candied cheerries
7 cups pecan pieces

Instruction:
Cream butter & sugar, add other ingredients. Drop onto ungreased pan. Bake 250 or 300 degrees for 20-30 minutes.

Molasses Cookies

Ingredients:
3/4 cup shortening
1/4 cup light molasses
1 egg
2 cups flour
2 tsp baking soda
1 tsp ginger
1 tsp cloves
1/2 tsp salt
sugar

Instructions:
Mix all ingredients and then chill dough. Once chilled, roll into balls and then roll in sugar. Bake at 375 for 8-10 minutes. Do not brown.
