Molasses Cookies

Ingredients:
3/4 cup shortening
1/4 cup light molasses
1 egg
2 cups flour
2 tsp baking soda
1 tsp ginger
1 tsp cloves
1/2 tsp salt
sugar

Instructions:
Mix all ingredients and then chill dough. Once chilled, roll into balls and then roll in sugar. Bake at 375 for 8-10 minutes. Do not brown.

Sour Cream Sloppy Joes

Ingredients:
1.5 lbs Hamburger
1 pkg Lipton Onion Soup Mix
1 small container sour cream

Instructions:
Brown hamburger; drain. Add in Lipton Onion soup mix and sour cream. Stir and serve!

Spice Drop Cookies

Ingredients:
1/2 cup butter
2/3 cup sugar
2 cups flour
2 eggs
1/4 cup molasses
1/4 cup nuts
1 tsp baking soda
1 tsp salt
1 tsp ginger
1 tsp cloves
1 tsp cinnamon

Instructions:
Sift flour with dry ingredients. Cream butter with sugar; add eggs and molasses. Mix together. Drop by spoonfuls on cookie sheet. Bake at 350 for 8 minutes or until lightly brown.

Fluffy Peach Pancakes

Ingredients:
6 medium peaches (2 lbs)
2 tbls butter
1/2 cup plus 2 tbls sugar
3 large eggs
3/4 cup milk
3/4 cup flour
1/4 tsp salt

Instruction:
Peel & remove pit from peaches; cut each into 8 wedges. Preheat oven to 425 degrees. In 12-inch skillet with oven-safe handle, heat butter, 1/2 cup sugar & 1/4 cup water to boiling over medium-high heat. Add peach wedges to mixture in skillet; cook, stirring occasionally, about 15 minutes, until peaches are golden and sugar mixture begins to caramelize.

Whisk together milk, eggs, flour, salt and remaining 2 tbls of sugar until smooth. When peaches are golden and lightly caramelized, pour egg mixture over. Place skillet in oven; bake pancake 15 minutes or until puffed and golden. Serve immediately.

Variations: This came out SO good! I left it in the oven just a bit too long, about 20 minutes, and the sugar mixture in the bottom of the pan REALLY caramelized into crunchiness.

Of course, you could use apples, pears, plums or what have you :-)

Caramel Brownies

Ingredients:
14 oz. Kraft caramels
evaporated milk
1 pkg. German chocolate cake mix
¾ c. melted margarine
1 c. chopped nuts
1 c. chocolate chips

Instruction:
Combine caramels and ½ cup evaporated milk in double boiler. Sir until melted. Cool. Combine cake mix, melted margarine, nuts and 1/3 cup evaporated milk. Press ¾ of the dough into a greased 9—13 inch pan. Bake for 8 minutes at 350 degrees.

Sprinkle chocolate chips over baked crust. Spread caramel mixture over chips. Crumble the rest of the dough over caramel layer. Return to oven and bake 18 to 20 minutes. Cool slightly, then refrigerate to set caramels (about 30 minutes).

Chicken Tomato With GreenBeans

Ingredients:
4 chicken breasts, cut into 8 equal pieces
2 tablespoons olive oil
seasoning of choice
1 onion, chopped
1 teaspoon diced garlic
1 can diced tomatoes
2 cups frozen green beans, thawed

Instruction:
Heat olive oil in large fry pan that has a lid to it. Place chicken in the heated pan and turn once or twice to coat. Add the onion and garlic to the pan. Sprinkle the seasonings on top (I use a seasoning salt). Turn and season on the other side. Pour tomatoes on top covering the chicken evenly. Turn heat down to just below medium. Place lid on top and cook until chicken is done. Once chicken is done pour the green beens on top, mix in and let sit until they are warm. Spoon over cooked rice!

Variations: For extra flavor I cook my rice in a chicken broth or add chicken bullion to the water!

Other vegetables can be added instead such as spinach, peas, snowpeas or any you might prefer!
