Hawaiian Chicken Breasts
Ingredients:
4 Chicken breasts, boneless, skinless
1 egg, slightly beaten
3/4 cup bread crumbs
1 tsp salt
2 Tbsp margarine
1 cup pineapple juice
2 tbsp lemon juice
1 tbsp cornstarch
1 tbsp sugar
Slivered almonds, optional
Instructions:
Dip chicken breasts in egg, then roll in bread crumbs. Season with salt. Melt margarine in skillet. Brown chicken. Pour off excess fat. Add juices, cornstarch and sugar to skillet. Cover and simmer for 20 to 25 minutes. Top with almonds, if desired.
